Recipe! Banana Nut Bread [video recipe]


This is the perfect snack and whips up very quickly-- take old brown bananas and turn them into something truly special!


Lisa's Banana Bread
preheat oven to 350 degrees
grease inside of a loaf pan (9x5)
3-4 medium sized bananas, the browner the better, mashed
pinch salt
1/4 cup vegetable oil
1/2 cup sugar
1/4 cup packed brown sugar
1 egg
1 cup all purpose flour
1/2 cup whole wheat flour
1/4 teaspoon baking soda
1 1/2 teaspoon baking powder
1/2 cup walnuts or pecans
1/4 teaspoon cinnamon

Mash bananas. 
Add a pinch of salt.
Mix well.
Add oil, egg, sugars.  Mix.
In a separate bowl, mix flours and baking soda and powder.
Add dry to wet.  Mix just til incorporated.  Can be lumpy.
Add cinnamon and nuts, and mix lightly.
Pour into pan.
Bake until done, about 45-55 min.

Let cool in pan 10 min before removing from pan.
Let cool an additional hour before wrapping in foil.  After completely cooled, it can be frozen or eaten.
